Appetizer:

Chicken Panchos
Corn chips, topped with melted cheese and refried beans, covered with chicken, and heated with bits of green onions, tomato, and guacamole.

Main (Guests will have three options):

Huevos Rancheros
Two fried eggs (sunny-side up) served on a corn tortilla, and topped with our mild Spanish sauce, tomato, and green onion, all served with refried beans and Mexican rice.

Chorizo con Huevo
Mild Mexican sausage combined with scrambled egg, served with refried beans, Mexican rice, and tortillas.

Spanish Omelette
A delicious omelette made with cheese and topped with our mild Spanish sauce, tomato, and green onion, all served with refried beans and Mexican rice.

Soft Drink:

Coke, Diet Coke, Sprite, Dr. Pepper, Lemonade, Fruit Punch, Iced Tea, Coffee

Mini Skylab Burrito
A large flour tortilla, filled with your choice of beef or chicken, beans, Mexican rice, Monterey Jack cheese, lettuce, tomatoes, and topped with our mild red sauce (beef) or ranchera sauce (chicken), chopped green onion and melted cheese.

Enchiladas rancheras
Two cheese or enchiladas, smothered with our ranchera sauce, topped with diced tomato, green onions, and sour cream.

Cheese quesadillas, flautas (chicken and potato)

2 item combination
Guests will choose two items from the following list. Plate includes refried beans and Mexican rice.

• taco (beef, chicken, or potato)
• chile relleno
• enchilada (beef, chicken, or cheese)
• Tamale (beef or chicken)

Fajitas (Beef, chicken, or vegetarian)
Tender strips of marinated chicken or beef, grilled with bell pepper, onion, and tomato. Served with Mexican rice, refried beans, and corn tortillas. Vegetarian fajitas come with squash. (Not served in skillet).

Skylab Burrito
A giant sized flour tortilla, filled with your choice of chile con carne (pork or beef), or shredded chicken, and layered with refried beans, Mexican rice, shredded lettuce, tomato, green onion, and topped with our mild red sauce (beef), or ranchera sauce (chicken or pork.) Comes with a side of sour cream and a scoop of guacamole.

Carne Asada
Rib-eye steak, charbroiled to your desire, served with our house guacamole, grilled scallion onions and tortillas.

Tampiqueña Special
Strips of specially marinated flap meat steak, served with a cheese enchilada, and corn tortillas. Served with Mexican rice and refried beans.

Deluxe shrimp
A delicious omelette made with cheese and topped with our mild Spanish sauce, tomato, and green onion, all served with refried beans and Mexican rice.

Dessert:

Choice of flan, churros, or apple chimichanga
